  1. LED Light - to notify that the left Vat is heating

  2. Press this button to start and stop cook cycles for the left basket

  1. Filter Drain Pan - Oil is drained into this pan and then is pumped through the filters to help prolong the use of oil

  2. Basket Rest - The baskets hand on this when not in use, or to drain the product after a cook cycle

  3. High Limit Switches - Reset switches for the overheating safety switches for each well

  4. Vat Covers - Covers the Vat when not in use

  5. Filter Valve Handles - Yellow handles open & close the filter valve when pumping oil into Vat

  6. Drain Valve Handles - Red handles open & close the drain valves

  7. Purge Handle - Turn black handle to cook position (open) during operation and turn it to the filter position (closed - shown above) during filtering

Filling or Adding Oil

CAUTION: THE OIL MUST ALWAYS BE ABOVE THE HEATING ELEMENTS WHEN THE FRYER IS HEATING

Oil must be filled to above the elements to the oil level indicator.

Failure to fill to this level could result in a fire and/or damage to the fryer.

PPE MUST BE WORN WHEN HANDLING HOT OIL. RISK OF BURNS.

Start Up

  1. When Vats are filled to the proper line, move power switch to ON position.

  1. If display shows “IS POT FILLED?” double check oil level and then press the √ button for “YES”.

  1. Unit automatically goes into the Melt Cycle until temperature is 85 degrees.

Cooking Display

  1. Once out of the Melt Cycle, LOW TEMP flashes until the setpoint temperature has been reached. No cook cycles can be started while "LOW TEMP" shows in the display.

  1. Once the set-point temperature has been reached, the product name now shows in the display and product now can be placed in the oil.

  1. Press a timer button.

  1. Display shows the name of the product cooking and

    the timer counting down.

  1. When cook cycle is complete, an alarm sounds and display shows "PULL".

  1. Press the timer button under PULL to stop the alarm, and lift basket from Vat.

Cleaning

Quick Filter

Materials Required:

  • Fine Mesh Skimmer

  1. Press and hold the Filter button (on either side) until display shows “1. QUICK FILTER?”. Select yes.

  1. Check Filter Pan: Display will show “DRAIN PAN READY”.
    Make sure the filter drain pan is pushed into place and the filter pan cover is on. Select yes.

  1. Display will show “SKIM VAT”. Once the crumbs are skimmed of the top of the oil, press button.

  1. Display will show “OPEN DRAIN”.
    Turn red drain handle to open drain and the display shows "DRAINING" and oil drains from the Vat.

CAUTION: TO AVOID OVERFILLING THE DRAIN PAN, ONLY DRAIN 1 VAT AT A TIME.

  1. Display shows "VAT EMPTY”.

    Check that drain is clear and Vat is empty. Press button.

  1. Display shows "OPEN RETURN VALVE".
    Turn the yellow return valve handle down to open valve & start pump and then press button.

  1. Display now shows “WASHING” and the filtering process begins.

  1. Once control has completed the filtering process, display shows “CLOSE DRAIN”.

  1. Turn red drain handle to close the drain, display shows "FILLING" and the Vat then re-fills with oil.

  1. Once Vat is filled, display shows "IS POT FILLED". Make sure Vat is full and then press button.

  1. Display shows "CLOSE RETURN VALVE".
    Allow oil to bubble for 10 to 15 seconds and then close the yellow return valve handle. Press button and the controls return to normal operations.

  1. Display shows "OPEN PURGE VALVE".

Daily Filter

Materials Required:

  • Green Scourer

  • Degreaser (Suma Envy)

  • Chux Cloth

  • Fine Mesh Skimmer

CAUTION: PPE REQUIRED WHEN FILTERING DEEP FRYER: GLOVES, APRON, FACE SHIELD.

  1. Check Filter Pan: A new filter pad should be used on the first filter of each day, but the same filter pad can be used the rest of the day, except

    for fish Vats.

CAUTION: FILTER FISH VAT LAST AND CHANGE FILTER PAD AFTER USE.

  1. Make sure the filter drain pan is pushed into place and the filter pan cover is on pan.

NOTE: Make sure oil is hot: The best results are obtained when the frying oil is filtered at the normal frying temperature.

  1. Turn off the heat to the Vat being filtered. Press and hold the Filter button until display shows “1. QUICK FILTER?” and press ▼ button until display shows “2. MAINT FILTER?”

  1. Press the button for YES and display shows “DRAIN PAN READY?”.

NOTE: Make sure the filter drain pan is pushed into place and the filter pan cover is on.

  1. Press button for YES and "OPEN DRAIN" shows in display.

  2. Turn red drain handle to open drain and display shows "DRAINING" and the oil drains from the Vat.

  1. Once oil has drained from Vat, use the lift tool and lift the hinged element from the Vat to clean the bottom of the Vat.

NOTE: Ensure you are wearing heatproof gloves.

  1. Once all the oil has been drained, remove all left-over food particles using a chux cloth.

  2. Use a green scourer and a small amount of degreaser and scrub inside of Vat and back panels.

  1. Wipe out with clean chux cloth to ensure no chemical residue is left and wipe dry.

  1. Once Vat is clean, display shows “SCRUB AT COMPLETE?”. Press button, display shows “OPEN RETURN VALVE TO WASH VAT”.

  1. Lower element and turn the yellow return valve handle to open valve and press button. Display shows "WASHING". Oil circulates through vat and once wash cycle is complete, display shows "CLOSE DRAIN".

  1. Turn red drain handle to close drain and then display shows "IS POT FILLED?".

  1. Once Vat is full press button and “CLOSE RETURN VALVE”. Using yellow handle, close return valve and press button.

  1. Turn red handle to open drain, display shows “RINSING”, and oil drains from vat. When rinsing is complete, display shows “RINSE AGAIN”.

  1. The display shows "OPEN RETURN VALVE TO POLISH?".
    Turn the yellow return valve handle to open valve. Oil is "polished" by circulating it through filtering system and display shows "5:00 STOP POLISH". If desired, press button to stop, otherwise oil is polished for 5 minutes.

  1. Once the oil is polished, the display shows "CLOSE DRAIN".
    Turn red drain handle to close drain and then display shows "FILLING" and vat fills with oil.
    Let oil fill until it starts to bubble. Let oil bubble for about 15 seconds to ensure all oil is out of pan.

  1. Once full, the display shows "IS POT FILLED". When confirmed, display shows "CLOSE RETURN VALVE".

  1. Press the power button to turn on heat and continue cooking.

 

Deep Clean Mode

Materials Required:

  • Degreaser (Suma Envy)

  • Green Scourer

  • Chux Cloth

  • Fine Mesh Skimmer

  • 2 Litre Jug

  • Heat-Resistant Bucket

CAUTION: PPE REQUIRED WHEN FILTERING DEEP FRYER: GLOVES, APRON, FACE SHIELD.

NOTE: Oil must be drained and emptied before completing Deep Clean.

  1. Press and hold Temp and Info buttons until LEVEL - 1 shows in the display, followed by “ENTER CODE”.

NOTE: Code is 1 2 3 4

  1. Press ▼ button twice until “DEEP CLEAN” shows on the display. Press button twice.

  1. Display will show “LEFT RIGHT”. Press to select left Vat and X for the right.

  1. Display will show “OIL RMVD”, press for YES.

  1. Fill fryer will tap water to the fill line. Add required amount of chemical to water in each vat of the deep fryer. If you have a 12L vat, use 1.2L Suma Envy.

  1. Display shows "SOLUTION ADDED?", press to confirm.

  1. Display will show “START CLEAN”, press to start. A countdown timer will start, with the display showing “CLEANING”.

NOTE: Fryer will heat to 91°C for 1 hour.

  1. Add water as needed during the cleaning process to keep solution above top fill line.

  1. At end of hour, display shows "CLN DONE" and beeps. Press button and then display shows "REMOVE SOLUTION FROM VAT".

  1. Empty filter drain pan of internal filtering components, take the components to a sink to be cleaned. Return the empty filter drain pan and cover the fryer.

CAUTION: To avoid burns when pouring hot solution, wear heat proof gloves, apron and face shield.

  1. Using a 2L jug, remove solution from Vat, pouring it into the heat-resistant bucket for disposal.

NOTE: Any remaining solution can be drained into the drain pad for disposal in step 13.

  1. Once Vat is empty, press button and display shows “SCRUB VAT COMPLETE”. Clean Vat as per Daily Cleaning Procedures.

  1. Once scrub is complete, press button. Display shows “DRAIN PAN READY”. Make sure the drain pan and cover are in place, press button.

  1. Turn red drain valve handles to open drain, display shows “RINSE VAT”.

  1. Pour clean water into Vat to rinse, allow water to drain into drain pan.
    Rinse at least 3 times.

NOTE: Be careful not to overfill drain pan.

  1. Once Vat is completely rinsed, press button. Display will show “VAT DRY”.

CAUTION: To avoid burns, ensure Vat is dry so oil does not mix with water.

  1. Pull drain pan from under fryer and empty, using 2L jug and pouring into heat resistant bucket for disposal.

  1. Once Vat is dry, press the button.

  1. Display will show “CLOSE DRAIN”. Turn red drain valve handle to close the drain, controls return to normal operation.

NOTE: Refer to Filling or Adding Oil to refill the Vat.

Changing Filter Pad

Materials Required:

  • Detergent (Suma Light)

  • Chux Cloth

  • Filter Pad

  1. With the drain pan empty, open the door, unlatch the drain pan stop and pull-out the drain pan assembly.

CAUTION: PAN COULD BE HOT. WEAR PPE.

  1. Lift the pan cover from the drain pan.

  1. Lift the crumb basket from the drain pan.
    Wipe the oil and crumbs from the crumb basket.

  2. Clean the crumb basket with detergent and water, then rinse with hot water.

  1. Remove the filter pad retaining ring and clean thoroughly with detergent and water. Rinse with hot water.

  1. Pull the filter pad from the pan and discard pad.

  1. Remove the bottom screen from pan and clean thoroughly with detergent and water. Rinse thoroughly with hot water.

  1. Wipe the oil and crumbs from the drain pan.

  1. Clean the drain pan with soap and water, then thoroughly rinse with hot water.

    Be sure that the drain pan, bottom screen, crumb catcher, and the retaining ring are thoroughly dry before placing filter pad into pan as water will dissolve the filter pad

  1. Reassemble in reverse order, placing the bottom screen into the filter pan first, followed by the filter pad, retaining ring and the crumb catcher.

  1. Push the filter pan assembly back underneath the fryer, making sure the filter tube on the pan makes a good connection with the fitting underneath the fryer.

  1. Make sure the drain pan stop is engaged and the fryer is now ready for normal operation.

Use an all-purpose cleaner and chux cloth to clean walls next to and behind fryer.

  1. Grasp the basket rest with 2 hands and pull it off the “key-ways”.

  2. Clean in the sink with detergent and green scourer.

  3. Clean the area behind the basket rest and then reinstall the basket rest.
