Operations
Diagram
LED Light - to notify that the left Vat is heating
Press this button to start and stop cook cycles for the left basket
Press this button to start and stop cook cycles for the left basket (4 vat only)
Digital Displays
Press this button to start and stop cook cycles for the right basket
Press this button to start and stop cook cycles for the right basket (4 vat only)
LED Light - to notify that the right Vat is heating
On/Off Button - Press to turn on and off the heat system to the left Vat
LED light will be on when a product is selected
Product option
Filter Button - Used in the programming and filtering modes
Temperature Button - Press once for actual temp and twice for set temp
Used in the programming modes
Filter Button - Used in the programming and filtering modes
On/Off Button - Press to turn on and off the heat system to the right Vat
Filter Drain Pan - Oil is drained into this pan and then is pumped through the filters to help prolong the use of oil
Basket Rest - The baskets hand on this when not in use, or to drain the product after a cook cycle
High Limit Switches - Reset switches for the overheating safety switches for each well
Vat Covers - Covers the Vat when not in use
Filter Valve Handles - Yellow handles open & close the filter valve when pumping oil into Vat
Drain Valve Handles - Red handles open & close the drain valves
Purge Handle - Turn black handle to cook position (open) during operation and turn it to the filter position (closed - shown above) during filtering
Filling or Adding Oil
CAUTION: THE OIL MUST ALWAYS BE ABOVE THE HEATING ELEMENTS WHEN THE FRYER IS HEATING
Oil must be filled to above the elements to the oil level indicator.
Failure to fill to this level could result in a fire and/or damage to the fryer.
PPE MUST BE WORN WHEN HANDLING HOT OIL. RISK OF BURNS.

CAUTION: FILTER FISH VAT LAST AND CHANGE FILTER PAD AFTER USE. |
NOTE: Make sure oil is hot: The best results are obtained when the frying oil is filtered at the normal frying temperature. |

NOTE: Make sure the filter drain pan is pushed into place and the filter pan cover is on. |

NOTE: Ensure you are wearing heatproof gloves.

Deep Clean Mode

Degreaser (Suma Envy)

CAUTION: PPE REQUIRED WHEN FILTERING DEEP FRYER: GLOVES, APRON, FACE SHIELD.
NOTE: Oil must be drained and emptied before completing Deep Clean. |
NOTE: Code is 1 2 3 4 |

| NOTE: Fryer will heat to 91°C for 1 hour.
|
|
| CAUTION: To avoid burns when pouring hot solution, wear heat proof gloves, apron and face shield.
NOTE: Any remaining solution can be drained into the drain pad for disposal in step 13. |

|
NOTE: Be careful not to overfill drain pan. |
CAUTION: To avoid burns, ensure Vat is dry so oil does not mix with water. |

Maintenance
To ensure a long life of your fryer and the components, regular maintenance should be performed.

Weekly | Clean behind fryer | Ensure the fryer is cold and Vat lid is closed. Use an all-purpose cleaner and chux cloth to clean walls next to and behind fryer. |

Troubleshooting
Problem | Cause | Correction |
---|---|---|
Oil will not heat but lights are on No Heat error “E-22” | All power cords not plugged-in | Unit has 2 power cords; make sure both are plugged-in; have heat circuit checked |
Control error code “E-10” | Open high limit circuit | Allow heating elements to cool (15-20 minutes) and reset high limit by pressing down and releasing raised side of the switch for the Vat that is not operating; switches are located behind right door; if high limit does not reset, high limit must be replaced. |
Vat is under-filled | Filter pan needs cleaned | Clean filter pan and change paper or pad |
Oil foaming or boiling over top of Vat | • Water in oil | • Drain and clean oil |
Oil will not drain from Vat | • Drain valve clogged with crumbs | • Open valve, use straight white brush to force crumbs through drain valve Do not leave brush in drain valve. |
Filter motor runs but pumps oil slowly | • Filter line connections loose | • Tighten all filter line connections |
Bubbles in oil during entire filtering process | • Filter pan not completely engaged | • Make sure filter pan return line is pushed completely into the receiver on the fryer |

Error Codes

“E-6A“ | Temperature probe open | Turn switch to OFF position, then turn switch back to ON; |
“E-6B“ | Temperature probe shorted | Turn switch to OFF position, then turn switch back to ON; |
“E-10“ | High limit A = Trips above 300°F | Allow heating elements to cool (15-20 minutes) and reset high limit by pressing down and releasing raised side of the switch for the Vat that is not operating; switches are located behind right door; if high limit does not reset, high limit must be replaced |
“E-15“ | Drain switch | Make sure drain handle is completely turned to the close |
“E-21“ | Slow heat recovery | Have a certified service technician check the fryer for correct |
“E-22“ | Heat error/No heat | Check power cord and have heat circuit checked |
