Operations

Touch Pad

CONTROL OFF

  1. Press the red power key to turn control on

CONTROL ON

  1. Press CREW to start using oven

  • Press HELP to show help screen

  • Press light bulb to turn oven light On/Off

  • Press snow flake to cool down oven

  • Press green power key to turn off controller

PRE-HEATING

  1. Oven Pre-Heating will occur automatically

  • Press HELP to show help screen

  • Press Back to return to previous screen

  • Heat ‘On’ symbol in bottom left corner will illuminate when oven is heating

 

NOTE: Shelves cannot be selected until oven has completed ‘pre-heating’

SELF SELECT

  1. Once pre-heating has completed, press the + to select shelf

  • Always select empty shelves nearest top of oven first

 

NOTE: Up to 5 shelves can be selected

SELECT PRODUCT

  1. Select from product list

 

NOTE: Alarm will sound when oven is ready to load

LOAD TRAY (S)

  1. Load Trays to selected shelf or shelves. Always select empty shelves nearest top of oven first

  • Press RED - to cancel a shelf

 

NOTE: Close oven door after loading trays, the program will start cooking automatically

PROGRAM START

  1. When tray shelf is running, it is coloured RED

NOTE: Recipe name and countdown time alternate in the shelf display

DONE - TIME UP

  1. Alarm will sound

  2. Open oven door and remove tray(s)

NOTE: Oven alarm and shelf selected will self-cancel when the oven door is closed

Cleaning

Daily Cleaning

Materials Required

Detergent

Stainless Steel Cleaner

Green Scourer

Chux Cloth

Sanitiser

NOTE: Clean interior of oven first. This prevents build-up of soil hand fingerprints on exterior of oven whilst cleaning the interior of unit

WARNING: HOT SURFACES

  1. Activate oven cool-down function on controller

  2. Open oven door, when temperature reaches 50°C oven will shut down

  1. Turn ‘OFF’ power to oven before commencing cleaning

  2. Wearing heat resistant gloves, remove side racks from the oven and place in sink

  3. Scrub side racks with warm soapy water and a green scourer

  1. While oven is still warm, wipe down interior with warm soapy water and a green scourer

CAUTION: DO NOT SPRAY CLEANER INTO THE FAN/HEATER AREA

  1. Rinse oven interior, with a clean chux. Remove all film and allow to air dry

  1. Rinse oven side racks with clean, since with fresh water

  2. Allow side racks to air dry

  1. Return clean oven side racks to the oven

  1. Wipe down with a clean, sanitised chux cloth. Use paper towel to dry glass

  2. Polish exterior stainless steel with Stainless Steel Cleaner

Maintenance

Monthly Door Seal Check

Damaged door seals can affect cooking temperatures and quality of product being cooked.

WARNING: OVEN MUST BE COLD BEFORE COMMENCING TASK

  1. Isolate oven from electricity supply

  2. Inspect oven door seals for wear and tear or damage

  3. Organise for door seals to be replaced if worn or damaged
