Eversys Operating and Cleaning Procedures

The EVERSYS machine is a super automatic coffee machine that automates the entire process of making a
perfect Barista coffee drink.

WHAT’S HAPPENING INSIDE THE MACHINE

 

OPERATING PROCEDURES

OPENING

1 Wake up with Standby button. If the machine is already switched on and in standby mode, press and hold (3s) the standby button(1) to power up.

2. Press rinse to commence start up. Complete a rinse on every group head

3. Press steam purge to clean out all steam wands

4. Run a double espresso through every group head to flush any residual chemical

5. Wipe over milk lines with a clean cloth, connect milk lines to bottles and run an auto 16oz milk jug to flush any residual chemical from the lines, discard textured milk

Always ensure the fridges are under 5 degrees and in full operation

  • The machine will inform you when to change the milk bottles over during service

Left fridge = 2 x Full Cream. Right fridge = 1 x Full Cream, 1 x Skim (in the order left to right)

Keep the outside of the lines clean to avoid any cross contamination in the fresh milk

6. Fill up all hoppers with beans -

  • Remove the bean hopper lids (1).

  • Ensure the bean hoppers are open (locked).
    When unlocked the bean hopper is loose, and it will not be possible to grind
    coffee (closed position).

  • Fill with fresh coffee beans.

  • Put the lids back to their original position.

 

 

Each screen has a different hopper, this has been labelled for you

7. After rinsing and setup is finished, complete an ETC (extraction time routine) by pressing the below button on every screen for the machine to dial in the recipe/grind/dose for the day

8. Test the extractions from each group head ensuring they record 30mls within 27-30 seconds. Taste the espresso shot to ensure it has the correct flavour profile to the TCC recipe.

9. Test the automatic milk and auto steam wand that the temperature reached is 65 degrees with a thermometer.

 

10. Turn the cup warmer on for the day.

OPERATIONS

PREPARING THE ESPRESSO

  1. Adjust the coffee spout height to suit the drink you are preparing

  2. Place required cup/s under the coffee outlet.

  3. Press one of the double coffee products available (e.g. 2x Espresso).

  4. Wait for the product to dispense.

HOT WATER - caution!
Your hot water button has been programmed for a long black cup. All product buttons function as start/stop buttons.
Press the button to start dispensing the water and, if necessary, to stop dispensing
manually: press the same product button again (eg. if filling a teapot)

  1. Place a cup under the the hot water outlet.

  2. Press the hot water product.

  3. Wait for the product to dispense.

Note: the Left hand screen has been programmed for a long black cup and middle screen for long black mug, these buttons will prepare the hot water and espresso for each beverage

TEXTURING MILK - Manual process/Alternative milks

  1. Before using the steam wand, press the purge button

  2. Insert the steam wand in the milk frothing pitcher (filled to one third with fresh cold milk).

  3. Press the Manual or Auto steam buttons. Manual steam you will need to use your thermometer for reach the desired temperature (65*). The Auto steam button will stop at that temperature for you

    1. For Auto milk you can use the programmed 12oz (regular takeaway cup) and 16oz (large takeaway cup) milk buttons to provide you with the exact amount of milk required to prepare those sized drinks in full cream or skim milk.

    2. NOTE: Skim milk can only be accessed by the left screen. To auto texture skim press the button on the bottom of the screen first for the milk to pull from the skim milk bottle

  4. Complete your texturising/auto process/wait for the product to dispense.

  5. Purge by pressing the button on screen and wipe the steam wand.

Note: the 12oz (regular takeaway cup) and 16oz (large takeaway cup) milk buttons have been programmed to provide you with the exact amount of milk required to prepare those sized drinks in full cream or skim milk

RINSING
It is possible to rinse at any time by pressing the Rinse (1) button.

After 10 min. idle mode (no drink is being made), a pre-heat rinse is requested by the machine to ensure the machine internals are hot to prepare the coffee.

 

PURGING

After every use of the steam wand (steam arm) it is necessary to wipe and purge it.

  1. Press the blinking purge button on the main screen (1).

  2. Wipe the steam wand with a damp cloth (2). Change cloths every day.

  3. On the screen that displays, press purge (3).

EMPTY AND CLEAN THE GROUNDS DRAWER

Once the grounds drawer is full with coffee cakes, empty it according to the following steps and the
instructions displayed.

  1. Move the coffee outlet (1) all the up and remove the grounds drawer (2).

  2. Empty the grounds drawer, clean and dry it.

  3. Put the grounds drawer back to its original position.

  4. Press Yes to acknowledge emptying of the grounds drawer (or No to cancel).



DAILY CLOSING PROCEDURE

Regular cleaning is mandatory in order to ensure problem-free operation of the machine and to
ensure optimum coffee quality.
It is imperative to ensure that customers are not subject to any health hazards as a consequence of the
consumption of the food items dispensed by the machine.
If care and cleaning of the machine is not carried out properly, dispensing milk beverages can
constitute a food hygiene issue so please follow this process methodically.
All automatic cleaning operations are logged within the machine

 

Refill and visual check of the coffee cleaning balls dispenser

Wearing gloves open the lid (not the bean hopper!) and decant a full container of Eversys Everclean Balls into dispenser, discard container. The balls are used automatically by the machine during the nightly cleaning cycle.

Put the lid back to its original position

Automatic Milk system & Machine cleaning

DO NOT REMOVE THE MILK TUBES FROM THE BOTTLES before requested on the machine. The milk in the tube will be pushed back.

  1. Press the menu to locate the rinse button and hold button for 3 seconds to run automatic cleaning.

2. Press YES or NO to cancel

3. The system will commence performing rinse cycles, will distribute a coffee cleaning ball and brews in the chamber. Cleaning and Wash cycles are performed automatically.

4. Empty and clean the grounds drawer when the screen prompts you to complete

4. Press continue

5. MILK LINE CLEANING Remove the milk bottles and store in the main fridge during cleaning process. Clean the internals and externals of the milk fridge.

Wearing gloves and goggles. Place two pumps of the the Everclean chemical into each of the cleaning chambers (do not use these containers for any other use). NOTE: this chemical is caustic, please apply caution. The SDS is stored win your SDS folder should any accidents occur

Place the milk tube inside the cleaning tank (6). Ensure that it correctly lays at the bottom
of the tank.

Place the empty cleaning tank inside of the fridge. Press continue on screen.

6. Wait for the cleaning to complete. It takes approximately 12 minutes to run through the process. While you are waiting refer to drip tray, screen and other cleaning below.

7. When cleaning is finished, remove and clean the milk cleaning tanks, discarding water residue in sink. Store safely with chemicals.

8. Clean the milk tank tube with a damp single-use cloth to remove any chemical residue.

 

9. Replace milk bottles and place tubes back in them ensuring they are fully submerged.

10. Press continue on the screen

11.Empty the grounds drawer in a sink and clean it. Clean inside the machine with a soft cloth. Rinse, dry and return to position.

 

12. Press Yes to acknowledge emptying of the grounds drawer (or No to cancel).

13. The machine is now clean and will go into stand-by mode overnight ready for use the next day.

Empty and clean the bean hoppers

  1. Switch off at the main power switch (when not in cleaning cycle)
    2. Remove the bean hopper lids (1).
    3. Unlock the bean hoppers (2) (Closed position).
    4. Remove the bean hoppers (3) and store the beans for re-use.
    5. Clean the bean hoppers (4) with soft soap, rinse with water and dry with a soft cloth.
    6. Reassemble in the reverse order and lock the bean hoppers (5) (Open position).

Make sure that the bean hoppers are perfectly dry before refilling with coffee
beans in the morning,

Clean the display | touch screen

  1. Press on the top middle of the touch screen (1).

  2. Press on the Clean the screen button (2).

  3. During the countdown, disinfect the screen according to the following recommendation.

  4. Spray disinfectant on a soft cloth and carefully wipe the surface with the cloth.
    Important! Never spray any liquid directly onto the surface.

Clean the drip tray

  1. Remove the drip tray grid (1).

  2. Wash the grid and inside of the drip tray (2) with soft soap and rinse.

  3. Put the drip tray grid back to its original position, laying flat.

Turn off the Cup Warmer

At the end of each day ensure you switch the cup warmer off
