Snowflow Acai Machine: Operating & Cleaning Procedures

The button in use will alight when in use: Before being able to change into the mode you want, you must change out of the mode you are on by pressing the button once

  1. ON/OFF SWITCH

  2. STAND-BY: keeps product cold when not in use

  3. AUTO: freezes and churns product when in use

  4. CLEAN: turns machine into cleaning mode, no refrigeration but allows use of dispenser.

  5. HARD: Number indicates the hardness of the product, 99 on display is ready to serve.

  6. FAN: will be alight during operation.

  7. SET: programming mode.

Materials & Chemicals Required

  • Clean Damp and Dry Cloths

  • PPE (Gloves, Apron and Protective Eyewear)

  • Two Cleaning and Sanitising Pails (only to be used for SnowFlow cleaning)

  • Diversey Suma Multipurpose cleaner + Suma Surface Sanitiser

  • Food grade lubrication/vaseline

 

CAUTION: As soft serve Acai is a food product, it is very important to ensure all sanitising solution has been flushed out of the soft serve machine completely. Failure to do so can potentially result in tainting the soft serve and poisoning the customer.

ALWAYS

  • Wear the correct PPE when performing any cleaning procedures, and follow the manufacturers recommendations for Suma Multi-Purpose Cleaner & ​ Suma Surface Sanitiser​ use, dilution, handling, disposal, and PPE.

  • Ask for help if you’re unsure.

  • Ensure the level of mix in the hopper is enough to cover the level probe at all times.

  • Ensure the product is fully defrosted before using

NEVER

  • Use any abrasive objects to clean the soft serve machine (e.g. scrapers or steel wool)

  • Spray any water or chemicals directly into any of the components on the unit. Doing so can cause damage to the critical unit components.

  • Use hot water, only cold water as this can damage the internals of the machine

  • Use any other chemical products including detergent inside the machine (eg. Suma Light).

Daily Opening Procedures

Before performing the opening procedures, check the display panel for any error messages. If a fault has been detected, investigate the cause before proceeding with the opening procedures (refer to troubleshooting guide below).

  1. Check that the drip tray is installed

  2. Press STANDBY then AUTO. The machine will automatically start churning and freezing the product

  3. Record the product temperature in Operations Journal

When the display above the HARD icon reads 99 then the product is ready to use

NOTE: This procedure should be performed 15 minutes prior to serving product, if this is not
pre-programmed.

Daily Close Procedures

  1. Press AUTO then STANDBY

  2. Remove drip tray and clean with Suma Multi-Purpose Cleaner​ and spray with Suma Surface Sanitiser​, allow to air dry

  3. Wipe over exterior of machine with a clean cloth and Suma Multi-Purpose Cleaner​

  4. Record the product temperature in Operations Journal

Weekly Cleaning Procedures (Before adding FRESH product into the machine)

Note this may mean the machine is cleaned multiple times per week pending volume

NOTE: Please ensure your hands are cleaned and sanitised before starting any of the below cleaning procedures and fresh cloths are used for cleaning.

Please note the machine can only stay in CLEAN mode for 1 hour

  1. Press AUTO then CLEAN. This will stop the churning and freezing process.

  2. Remove drip tray and clean with Suma Multi-Purpose Cleaner​ and spray with Suma Surface Sanitiser​, allow to air dry

  3. Using the dispenser, empty all remaining contents into a pail and discard.

  4. Fill hopper with 5L cold water and 5 pumps of Suma Multi-Purpose Cleaner​ (Smartdose) or Bucket fill (Quattro Select). NOTE: CAUTION POURING WATER, AVOID SPLASHES. USE SAFETY STEP TO ACCESS HOPPER.

  5. Press AUTO to stir the beater, allow 5 minutes.

  6. Press CLEAN

  7. Using the dispenser, empty all water and multi-purpose into a pail. Continue this until the water is clear when coming out

  8. Then rinse the hopper with clean water, following the same process in step 7, 2-3 times until all chemical has been rinsed out and water is clear.

  9. Turn the machine OFF

10.  Remove hopper lid, seal and paddle. Clean all components with Suma Light (detergent), lay on a clean tea towel and spray with Suma Surface Sanitiser​, allow to air dry

11.   Wipe out the hopper with a clean cloth and Suma Multi-Purpose Cleaner​, then spray with Suma Surface Sanitiser​, allow to air dry

12.   Remove the dispensing handle by unscrewing the 4 screws on the front

13.   Remove the handle pin, handle, and piston. Ensure that all o-rings are also removed. Clean all components with Suma Light (detergent) and spray with Suma Surface Sanitiser​, allow to air dry

14.   Remove beater from the cylinder, take off the gasket and clean all components with Suma Multi-Purpose Cleaner​, lay on a clean tea towel and spray with Suma Surface Sanitiser​, allow to air dry

15.   Wipe over exterior of machine with Suma Multi-Purpose Cleaner​ and spray with Suma Surface Sanitiser​, allow to air dry, checking that the filter and fan are clear from dust and dried product.

16.   Once all components are dry, Vaseline needs to be applied to the piston, o-rings, beater and gasket.

17.   Reassemble all components back into machine

  1. Place product in hopper ensuring it is fully defrosted before use. If ready to use product in machine turn the machine ON and press AUTO. If you are not using the product immediately/ready to serve (cleaning the machine after trade) turn the machine ON and press STAND-BY.

Programming the machine

Hardness adjustment:

·       Press and hold SET for 2 seconds. The values above will start flashing. Press the arrow button to cycle through the choices. Press AUTO to save settings

Parameter setting:

·       Press and hold SET for 10 seconds. The values above display P1. Press the arrow button to cycle through the choices (5-15mins). Press AUTO to save settings

Troubleshooting

Low liquid: ‘CL’ will be displayed above the HARD, accompanied by a beeping and the machine will subsequently stop.  Please top the machine up with your defrosted product.

Tank temperature sensor fault: ‘AL’ or ‘AH’ will be displayed above the ‘Set’ icon, accompanied by a beeping and the machine will subsequently stop. Please turn the machine off, disconnect from power and contact the SnowFlow Rep.

Cylinder temperature sensor fault: ‘AL’ or ‘AH’ will be displayed above the HARD icon, accompanied by a beeping and the machine will subsequently stop. Please turn the machine off, disconnect from power and contact the SnowFlow Rep.

High pressure switch alarm: ‘HH’ will be displayed, accompanied by a beeping and the machine will subsequently stop. Please turn the machine off, disconnect from power and contact the SnowFlow Rep.

Belt slipping or RPM too low: ‘NL’ is displayed, accompanied by a beeping and the machine will subsequently stop. Please turn the machine off, disconnect from power and contact the SnowFlow Rep.

No RPM signal: ‘- -’ is displayed, accompanied by a beeping and the machine will subsequently stop. Please turn the machine off, disconnect from power and contact the SnowFlow Rep.
