SOTA Speed Oven Cleaning and Operating Procedures

 

 

 

 

 

 

 

 

 

  1. On/Off Button- press to turn the oven on or off, or to exit info mode

  2. Info Key- Only able to be accessed when the oven is off or cooling down

  3. Up/Down Keys- Use these buttons to navigate between different menu items or food groups/items

  4. Display- Shows information relevant to the current oven operation and user options

  5. Back/Stop Key- When the oven is cooking, press the back/stop key to immediately stop a cook cycle. You can also use this button to go back when in a menu

  6. Enter Key- Press this key when saving changes to food item settings

  7. Soft Keys

  8. Numeric Keypad

 

Daily Operating Procedures

 

 

 

 

 

Touch the On/Off icon button to turn the oven on.

 

 

 

 

 

 

 

 

Select temperature.

 

 

NOTE: The temperature will be preset for your oven.

 

 

The oven will then start to heat up this will take approx. 15 minutes.

 

NOTE: When the oven has heated up it will “soak” for an additional 8 minutes. “Soaking” ensures the cavity surfaces absorb enough heat so that cooking is not affected.

 

 

 

 

 

Place food in oven then select group and the item you are wanting to cook.

 

 

CAUTION: Take care when putting food in the oven as the inside of the oven and oven doors will be hot.

 

 

 

 

The oven will then start the cooking cycle. The cook time will also be displayed on the oven as pictured.

NOTE: To stop the cook cycle you can touch the red stop icon. If the door is opened during the cook cycle, the cycle will pause until the door is closed again.

 

 

 

 

 

Check the food and remove from oven.

 

 

CAUTION: Tray and inside of the oven will be hot.

Daily Cleaning Procedures

CAUTION: Please ensure you use PPE when cleaning the oven as the TurboChef Oven Guard is CORROSIVE.

MATERIALS REQUIRED:

  • Heatproof gloves

  • Ecolab Greaselift RTU

  • TurboChef Oven Guard

  • Cleaning Towel

  • Protective Eyewear

  • Green Nylon Scrubbing Pad

CHEMICALS REQUIRED:

  • Ecolab Greaselift RTU (this replaces the Turbochef oven cleaner mentioned below)

  • TurboChef Oven Guard

ALWAYS:

  • Ensure you are wearing the correct PPE and following the manufacturer’s recommendations for chemical use, dilution, handling, disposal, and personal protective equipment (PPE). Ask for assistance if you’re unsure.

SAFETY PRECAUTIONS:

  • Ensure oven is adequately cooled down before starting any cleaning.

NEVER

  • Spray any chemical directly or spray any water hoses into any air vents or the holes in the back wall. Doing so can cause damage to critical oven components.
