with Self-Contained Air Filtration
Operating Instructions
Ensure that all stainless steel and polyester filters are correctly installed into the unit before use
Ensure that the duct cover panel is in position and secure before use
Switch on the fan before starting any frying appliances. This will create a draft over the top of the fryer to draw away any cooking vapors
Allow the fan to continue running after the fryer has been turned off. This will help to remove any residual vapors that are present as the fryer is cooling down
When shutting down at the end of the work day, simply switch the fan off
Cleaning
CAUTION: Oil must be cool before cleaning/changing the oil and unit
Materials Required
Chux Cloth
All Purpose Cleaner
Viva Detergent
Drying towel
Cleaning of the fryer station must be completed at the end of each work day
Always disconnect the unit from the power source prior to cleaning
Remove the baffle filters, particle filter and drip tray by raining the lid of the unit and removing the duct cover (seen in diagram above)
Wash these items in warm soapy water (in the sink with 1 pump of Viva) and rinse clean. DO NOT REASSEMBLE UNTIL THESE ITEMS ARE DRY
Wipe down all accessible internal and external surfaces of the unit with a chux cloth and All Purpose Cleaner. ENSURE TO SPRAY ONTO CLOTH AND NOT STRAIGHT ONTO UNIT
When your deep fryer has been drained for cleaning, it is recommended to take the fryer out of the unit so that the splashback can be thoroughly cleaned
Stainless Baffle: Stainless baffle filters remove larger oil/grease particles. These can be washing the the dishwasher or in the sink. After washing, rinse thoroughly with fresh water and dry before putting back into the ventilation system
Particle Filter (Polyester): Polyester filters remove finer oil/grease particles, these filters should not we cleaning in the dishwasher, the should be washed in a sink of hot soapy water. After washing, rinse thoroughly with fresh water and fry before putting back into ventilation system. When polyester filters start to discolour, disintegrate or cant be cleaned thoroughly, the filter should be replaced.
Carbon Filter: Carbon filters reduce odours from within the capture zone. These filters cannot be cleaned. If odours become more noticeable, they should be replaced.
Maintenance
As long as the cleaning instructions are followed the unit should give trouble free use for a long period. However, the odour controlling filter in the product has a limited life span and will need replacing after a period, which will vary according to use.

Troubleshooting
Before contacting your authorised service agent, ensure you check the following if your unit is not working.
Filters have been properly fitted
You are up to date with the daily cleaning schedule of the filters
The unit is plugged in correctly
The power is turned on
The power point is not faulty

Operations
Ensure the electrical cable is not damaged and does not hang over the counter
Keep unit covered when not in use
Check oil daily and change if necessary when cooled down. Some foods that are fried degrade oil quicker than others
A fire danger exists if the oil level is below the minimum marked level
Thermostat setting must be 185°C
When not in use, the unit MUST be switched OFF
General Precautions
Hot Equipment: These machines include heating elements. As with any commercial heating appliance the surfaces of this unit will get hot. Do not touch the surfaces of the machine whilst it is in use. Be careful when operating near other machinery. If your machine is in an area where unwary customers or staff can touch the unit you should provide additional warning signage if necessary
Daily Operating Procedures
Woodsen Self Contained Fryer turning ON:
Turn 'ON' mains power at mains supply.
Switch on the fan before starting any frying appliances. The top access lid must be closed before starting any frying operations. This will create a draft over the top of the fryer appliance to draw away any cooking vapours. The Clear neon indicator will illuminate to indicate that there is mains power to the fryer
Set the tank control thermostat to the temperature required 185ºc. The Orange neon indicator will illuminate to indicate that a temperature has been set
When the tank reaches the set temperature, the Orange neon will extinguish to indicate that the fryer is up to the correct temperature
Woodsen Self Contained Fryer turning OFF:
Depress and rotate the gas control valve clockwise to the 'Pilot' position.
The main burners will extinguish and the 'Pilot' will remain alight.
To the 'Off' Position
Depress and rotate the gas control valve fully clockwise to the 'Off' position
The 'Pilot' burners will extinguish
Cleaning
CAUTION: Oil must be cool before cleaning/changing the oil and unit
Screw drain extension pipe onto the end of the drain extension pipe.
Lift the locking slide on the valve handle to release the valve. Whilst holding the locking slide in the withdrawn position, rotate the handle anticlockwise to open the valve.
Drain oil into approved metal container, as provided (I.e. metal drum) taking care not to overfill the container. Draining into plastic containers is prohibited.
Once oil is completely drained out, close drain valve.
Fill fryer with cool water to the fill line.
Add 125mls of KAY QSR Heavy Duty Degreaser to water in each vat of the deep fryer.
Reconnect fryer to mains power and turn ‘ON’. Allow fryer to heat water to 80-90ºC for approximately 15 minutes.
Turn ‘OFF’ fryer and disconnect mains power.
Drain solution form vats. Discard chemical solution appropriately, in accordance with MSDS and local council regulations.
Scrub walls of fryer and back panel where baskets hang, using a nylon pad to remove any persistent carbon deposits (use further degreaser to remove any stubborn deposits)
While fryer is off, clean out internal surfaces of fryer cabinet. Clean doors, sides, back, valves and cabinet internals. Use a non-caustic multipurpose cleaner and apply with a damp cloth.
Reconnect fryer to mains power. Electrics must not be wet, damaged or interfered with in any way.
Ensure drain valve is closed and refill fryer with cool water
Turn fryer ‘ON’ position and heat waster to 90ºC for 10 minutes.
Turn fryer ‘OFF’.
Drain into metal drum and discard liquid solution appropriately, in accordance with MSDS and local council regulations.
Wipe out all internal surfaces, shelves, elements and probes with paper towel. Check that no moisture remains in fryer as this will result in oil splatter when heating new oil.
Refill fryer with TCC preferred deep frying oil.
Turn fryer on and set temperature to 185ºC.
