Ice Machine Cleaning & Operating Procedure

Hoshizaki KM40B, KM55B, KM80B

Operations

Drain Connections

  • To prevent a backflow, the outlet hose must be laid as shown below in Fig. 4

Operating Instructions

The icemaker is designed to produce and store edible ice. To keep the icemaker hygienic:

  • Wash you hands before removing ice, using designated ice scoop only, removing after use

  • Keep the scoop clean, store it in a clean bucket of sanitiser on the bench

  • Close the door after removing ice to prevent entrance of dirt, dust or insects into the storage bin

If the unit is turned off, wait for at least 3 minutes before restarting the icemaker to prevent damage to the compressor

Cleaning Schedule

Required Materials:

  • Chux cloth

  • Sanitiser

  • All Purpose Cleaner

  • Detergent

Scoop and Bin Door

The ice scoop and bin door should be cleaned daily.

  1. Use All Purpose Cleaned to spray into chux cloth and clean exterior door to ice machine

  2. Spray with Sanitiser once clean and leave to air dry

  3. Clean ice scoop with warm soapy water (detergent) and rinse thoroughly. Leave to air dry

Storage Bin

The storage bin in your icemaker should be cleaned at least once a fortnight. This should be completed of an afternoon on a day that works for your store.

  1. Remove all ice in the storage bin and place in the bench ice-well

  2. Turn off icemaker and disconnect from power supply

  3. Spray bin thoroughly with All Purpose Cleaner and wipe clean with chux cloth. Ensure you go over any parts that were not cleaned properly

  4. Wipe over the interior of the bin door, roof, back wall and floor of storage bin

  5. Rinse cloth in fresh water and wipe off any leftover solution

  6. Close the bin door and reconnect to power

Air Filter

Remove and clean the air filters every 2 weeks.

The plastic mesh air filters remove dirt and dust from the air, and keep the condenser from getting clogged. If the filters get clogged, the icemakers performance will be reduced.

  1. Remove air filter

  2. Clean the air filter by using a vacuum cleaner. When severely clogged, use warm water and All Purpose Cleaner to wash the air filter

  3. Rinse and dry the air filter thoroughly, and place back in position.

Troubleshooting

If the icemaker does not work properly or does not work at all, before calling for service, check that:

  • the unit is attached to a power supply

  • the control switch is in the ‘ICE’ position (photo attached →)

  • the water is turned on

  • the air filter is clean (see procedure above)
