Produce Washing Procedures

 

Prep Sink:

  1. Clean colander and sink, including food contact surfaces, before washing hands using hand washing procedure

  2. Cut away any damaged or bruised areas on the fruit or vegetables before handling or preparing

  3. Place fruit/vegetables in colander and place in sink, ensuring the produce does not touch the sink directly

  4. Wash produce thoroughly under running water

  5. Cleaned produce should be tried with paper towel

  6. Place peeled or cut fruits and vegetables on a separate clean container to prevent them from becoming cross-contaminated

  7. Clean and sanitise the sink and any other food contact surfaces/utensils used

 

Alternative Method:

  1. Clean designated food grade container, colander, large stainless-steel bowl and food contact surfaces, before washing hands using hand washing procedure

  2. Fill large food grade container with fresh water from sink

  3. Place on prep bench and add fruit/vegetables in container of water and wash thoroughly

  4. Once clean, place produce in colander and drain over large stainless-steel bowl

  5. Cleaned produce should be tried with paper towel

  6. Place peeled or cut fruits and vegetables in a separate clean container to prevent them from becoming cross-contaminated

  7. Dispose of water in empty wash-up sink. Clean and sanitise any food contact surfaces/utensils used

According to Food Standards Australia New Zealand (FSANZ), a sink is considered a food contact surface when it is used to wash fruits and vegetables. It must be cleaned and sanitised before being used to clean and wash food. Do not use the hand washing sink to wash food.
