Cleaning

Changing the Filter Paper

THE POWER SUPPLY MUST BE DISCONNECTED BEFORE CLEANING AND SERVICING THIS APPLIANCE

Pull filter draw out from under fryer

Remove Filter Strainer Cap and place aside

Unscrew the pickup tube counterclockwise to detach from filter pickup assembly

Slide off the filter paper clip

Remove used filter paper from filter screen. Dispose dirty paper directly into the bin

Replace with new filter paper, ensuring that the hole in the paper is on the top, so that the fitting in the filter screen protrudes through

Ensure the filter paper is folded to the underside of filter screen. This is to ensure the dirty oil can’t flow out the opening and enter back into the fryer.

Replace the filter paper clip and place back into filter draw

Re-attach filter pickup tube to the filter screen by screwing clockwise into the threaded fitting in filter screen

Place Filter Strainer Cap back onto the Filter Pickup Assembly

When closing the draw, ensure the Strainer Cap snaps tightly and securely into the donut fitting

  • Filter Paper must be changed every 3 days depending on the contents being cooked in fryer

FRYER/OIL MUST BE OFF AND COLD BEFORE CHANGING THE FILTER PAPER

Filtering the Oil

THE POWER SUPPLY MUST BE DISCONNECTED BEFORE CLEANING AND SERVICING THIS APPLIANCE

Turn fryer off and scrape into oil before

Drop blue lever to release oil into filter draw

Pull red lever out to pump oil back through to fry tank at the same time. Starting the filter process

Wait 90 seconds, until the fry tank is empty

Pull the blue lever back up to stop the oil from draining into the filter draw

The oil will then start filling back up in the fry tank. This should take about 2 mins. Once the filter draw is empty, the oil will start to bubble with air

Once this happens, push the red lever back in to close the pipe

During trade - turn the fryer back on

End of trade - Keep fryer off and check to see if filter paper needs to be changed

  • Oil should be filtered 2-3 times a day. Once after the breakfast and lunch rush, and then again at the end of trade

  • Oil can be filtered at 180 degrees so there is no need to wait for it to cool, since you do not have direct contact

Emptying the Oil

THE POWER SUPPLY MUST BE DISCONNECTED BEFORE CLEANING AND SERVICING THIS APPLIANCE. OIL MUST BE COLD PRIOR TO DRAINING THE VATS.

Pull the blue lever down to drain oil into filter draw

Connect the filter flush hose nozzle outlet into the quick connecting fitting

Point the filter flush hose nozzle into empty oil drum

Pull the yellow handle out to turn the pump on and allow oil to flow through the flush hose

When filter draw is empty, push yellow handle back in to deactivate the pump. Disconnect the filter flush hose by pulling back the black , emptying any oil left in the hose into the oil drum

  • Refill fry tank as needed

  • Recycle chip oil for seafood side. Discard seafood oil

Oil is returning to the tank slowly or not at all.

  1. Dirty filter paper.

Display Adjustments

Adjusting Display Settings

To begin all adjustments, hold down the [P] (program) and ON/OFF button for 2 seconds.

Change F to C Display

Display will show the current temperature scale setting. Press the [P] until you reach the C or F setting. Press the UP arrow key or DOWN arrow key to change scale setting. When set, press the [P] key to save setting and continue.

 

 

 

 

Change Cook Temperature

While display is showing [butt], momentarily press the [P] key. Display will show xxx°F or xxx°C, the current temperature setting. The default setting is 177°C. Press and hold the UP arrow key or DOWN arrow key to change the temperature setting. A single key press will increment or decrement the setting by one degree.
When set, press the [P] key to save setting and continue.

 

 

Set Timers

Select a timer key to change. The light below the key will illuminate. The display will show the current timer setting in MM:SS format.

 

 

 

 

Press the UP arrow key or DOWN arrow key to adjust the timer value. The value will change in steps of 5seconds each. When set, press the [P] key to save setting and continue. The display will return to [butt].

 

To Perform a Boil Out

ONCE A WEEK

Press the [P] key and the Down arrow key simultaneously. To exit boil mode, turn controller off.

 

 

 

Suma Envy:

100ml of Suma Envy per Litre of water.

  1. Turn the fryer off ensuring the oil is cold. Drain oil into empty oil drum from the filter draw as noted in the ‘Emptying the Oil’ section.

  2. Remove baskets, tank rack and basket hanger from fryer for cleaning.

  3. Remove and discard any large debris inside the fry tank.

  4. Close the drain valve and fill the tank with water to the level lines. Place the fryer into boil mode as noted in instructions above. If you have a 12L vat, use 1.2L Suma Envy.

  5. Turn fryer back on and allow water to heat to 80-90 degrees for 15 minutes.

  6. Turn off fryer and drain solutions from vats. Discard chemical solution properly in accordance with local council regulations.

  7. Scrub walls of fryer and back panels using a green scourer

  8. Fill vats with clean water and heat to 90 degrees for 10 minutes. Empty following instructions above. Wipe out, ensuring there is no moisture remaining.

  9. Refill with approved deep frying oil.
